Looking for a quick, healthy meal, that will feed a few people cheap. Try this Tex-Mex Skillet with ground turkey.
Ingredients:
- 1 lb lean ground turkey
- 2 cups water
- 1 and ¼ cup thick and chunky salsa
- 1 can of corn (drained)
- 1 can of black beans (frijoles negro) (drained)
- 1 green bell pepper (chopped)
- 1 red bell pepper (chopped)
- 1 whole onion (chopped)
- 2 cloves of garlic (chopped)
- 2 adobo Chipotle peppers with about a tablespoon of sauce (mashed)
- hot sauce to taste, (Frank's or Tabasco)
- 1 tablespoon Chili powder (or to taste)
- 1 teaspoon paprika
- 2 cups instant brown rice
Warning! "The Dood" likes it spicy! All spices should be added, to taste.
Toss ground turkey in really large skillet and brown. While turkey is browning add the chopped vegetables (onion, green and red pepper, garlic).
Keep stirring the meat and allow the vegetables to cook with the meat. While the meat is cooking add your spices to taste. Add your paprika, chili powder, mash up the chipotle peppers and adobo sauce and add that to the skillet, splash with hot sauce to taste.
Once you have added your spices, continue to brown the meat. When the meat is cooked thoroughly and browned add the 2 cups of water and the 1¼ cup chunky salsa. Add the black beans and corn. Next add the 2 cups of instant brown rice and let boil for 5 minutes stirring occasionally. After 5 minutes, cover,
turn off heat, and leave the skillet on the burner for about 15 to 20 minutes or until the rice has absorbed all the moisture.
Serve with soft flour tortillas, salsa, and garnish with cheese and sour cream.
